Made these chicken sausage bites this morning. They are great with breakfast, on a salad, or just as a snack by themselves. Gluten free banana bread Dry Ingredients 📌2 cups rolled oats (gluten free) 📌1/2 cup mix of hemp seeds and flax seeds 📌1 teaspoon baking powder 📌1 teaspoon cinnamon 📌½ teaspoon salt Wet  Ingredients 📌3 bananas, mashed (~1½ cups of mashed banana) 📌1 teaspoon vanilla 📌⅓ cup coconut oil, melted (Or other neutral oil) 📌2 eggs (Or 2 tbsp ground flax + 6 tbsp water) 📌⅓ cup milk (Or unsweetened almond drink) 📌⅓ cup honey (Or maple syrup) Optional Garnish: 📌½ banana, sliced Instructions 📌1. Preheat the oven to 180ºC (350ºF). 📌2. Put the rolled oats and seeds in the grinder until they form a flour. 📌3. In a large mixing bowl, add the flour, cinnamon, baking powder and salt. Mix to combine. 📌4. In a small bowl, mash bananas well with a fork. Add the vanilla, oil, eggs, milk, and honey. Stir well and then pour into the mixing bowl with the flour. Stir with a large wooden spoon just until combined. 📌5. Spray a loaf pan with cooking spray. Pour batter into pan. Garnish with sliced banana. 📌6. Bake for 35-60 minutes or until toothpick inserted into center of loaf comes out clean. 📌7. Transfer to a cooling rack and allow bread to sit in pan for at least 10 minutes. Transfer loaf out of the pan and directly on cooling rack.
